Fermentation takes place spontaneously in the old cask, then 24 months on full lees in the barrel (without racking) plus 24 months of bottle maturation.

Der brut Nature geht noch einen Schritt weiter – null Dosage, knochentrocken, aber durch 10 Jahre auf der Vollhefe eben nicht hart, sondern unglaublich gefällig.
Und der Rosé ist ein echtes Mosel-Unikat: entstanden aus einem glücklichen Zufall und einer großen Portion Neugier. Das Ergebnis: eine Finesse, die ich selbst nicht erwartet hätte.

We are delighted to finally share these special Rieslings with you. “As a former archaeology student, I have always been fascinated by rediscovering the old winemaking traditions of my great-grandfathers and grandfathers. Much of this knowledge has been lost over the last century. Through learning by doing, and with a great deal of heart and patience, we have rediscovered this old style of characterful and balanced wines. This traditional style of lightly fruity Rieslings is spontaneously fermented in wooden barrels, aged for two years on the lees, and then aged for at least ten years in the bottle before being released. These wines, formerly known as off-dry and now marketed under the name ‘Tradition,’ are an impressive testament to mature Rieslings.” — Ernst Loosen

A STORY OF TWO FAMILIES
Our Dr. Loosen winery unites two distinct winemaking traditions – from both sides of my family. My mother's family favored a delicate, light Mosel Riesling with a touch of residual sweetness – a signature style of my grandfather, Dr. Adams, who married into my mother's winery, Dr. Zach Bergweiler-Prüm-Erben. Later, I discovered another fascinating truth: My paternal great-grandfather, Peter Loosen from Ürzig, was an uncompromising advocate of dry wines. For him, any sweetness in Riesling was a flaw, and he simply sold any barrels that didn't dry completely as bulk wine. Both paths have their own unique appeal – and we have decided to continue both with respect and passion.
HOW WE REDISCOVER THE TRADITION OF OFF-DRY AND SWEET RIESLINGS AS PRODUCED BY MY GRANDFATHER.
After countless tastings of Rieslings from the 1940s, 50s, and 60s, I became curious about how these Prädikat wines of our ancestors were produced – before the German wine law of 1971 changed so much. This new law shifted the focus to must weight, instead of the single vineyard site and the recognizability of the Prädikat classification through tasting. Until 1971, there were clear rules for residual sugar in Prädikat wines like Kabinett and Spätlese: the potential alcohol content determined how much residual sugar a natural wine or Spätlese could have. Wines with, for example, 76° Oechsle were allowed to contain approximately 25–30 g/l of residual sugar – no more. The 1971 law abolished these limits, and suddenly many wines became increasingly opulent and sweet. To revive the original style with its subtle residual sweetness – as my grandfather used to say – we launched our "Tradition" project. Sporadically since 1993, but regularly since 2012, we produce one Kabinett, one Spätlese, and one Auslese each vintage – using our grandfather's methods: spontaneously fermented in the barrel, aged for two years in large wooden casks on the lees, and then matured for another ten years in the bottle after bottling before release. Patience is our most important ally here.

Dr. Loosen Riesling Sekt Brut impresses with its fresh Riesling fruit, fine bubbles, and invigorating elegance. Aromas of citrus fruits, green apple, and white peach meet a lively acidity and a dry, crisp finish.

The Dr. Loosen Spätburgunder Rosé Brut is a true Mosel original – born from a happy coincidence and a large dose of curiosity. When we were offered a Spätburgunder vineyard in the Ürziger Würzgarten a few years ago, it was immediately clear: we had to seize this opportunity. A Pinot Noir from one of the most spectacular Riesling sites on the Mosel. It was precisely this allure of the unusual that encouraged us to experiment. And the result speaks for itself.
Following traditional bottle fermentation and an impressive eight years of lees aging, this Rosé Brut presents itself with great finesse, delicate complexity, and a firm, elegant structure. A noble sparkling wine that showcases Pinot Noir at its freshest and most profound.

Dr. Loosen Brut Nature sparkling wine is the purest expression of Moselle sparkling wine craftsmanship. Bottled without any dosage, it showcases Riesling in its clearest, most uncompromising, and most mineral form. Second fermentation in the bottle, extended lees aging, and the characteristic slate soil result in a sparkling wine of exceptional precision: cool, taut, and delicate, with an electrifying acidity and an impressive mineral backbone.
Brut Nature means: no sugar, no dilution, no soft focus – just Riesling, slate and craftsmanship.

From various parcels of our red slate vineyards on the
Harvested in the Middle Moselle region, this is a very characteristic Moselle Riesling.
Lively and juicy, with delicate, playful aromas. Very invigorating, with
powerful structure, rich fruit - well balanced with the typical Mosel character
fine acidity. Our dry estate Rieslings mature for some time in
large oak barrels.

The Grauschiefer Riesling feinherb is a typical, characterful wine from the Middle Moselle region, impressively demonstrating the delicate balance that can be achieved between natural Riesling acidity, elegant fruit sweetness, and mineral slate spice. The grapes come from classic steep slopes around Bernkastel, characterized by barren, heat-retaining Devonian slate – the foundation for its clear, radiant aromatics.
The nose opens with juicy aromas of white peach, apricot, and ripe apple, underpinned by a hint of lemon and the typical smoky slate minerality. On the palate, the wine is playful and finely balanced: the delicate residual sweetness buffers the lively acidity without ever feeling heavy. The result is a wonderfully invigorating wine with great drinkability and a clearly defined, minerally fresh finish.

Satyricus – the name evokes the drink-loving companions of Bacchus, the god of wine, joy, grapes, fertility, and ecstasy. "Satyrs" are the male counterpart to the nymphs. This Riesling is fermented in wooden barrels with natural yeasts and shines with mineral elegance, delicate fruit, and low alcohol. This is how Mosel Riesling might have tasted 100 years ago.

The Quini Cuvée Blanc is a special edition made from grape varieties grown and vinified together. As the name suggests, this wine contains the following five different grape varieties: Riesling, Pinot Blanc, Pinot Gris, Red Riesling, and Gelber Kleinberger. With this special edition, we are reviving some long-forgotten, traditional grape varieties.
